Great Awakenings - Coffee (Philadelphia, Pa.)


Great Awakenings Cafe is an easy going coffee shop nestled in the Northeast section of Philadelphia, Pennsylvania that has incredible lattes, coffees, pastries and ice cream. 

Besides getting a premium cup of Joe Great Awakenings Cafe is also involved with the community by having art shows that suport youth groups and has also has bible study there on certain evenings (check the website). 

I enjoyed a salted caramel latte that I cannot anything like it in those high priced chain coffee spots and my son is now hooked on vanilla lattes. If you're ever in Philadelphia stop by this unique coffee shop for icecream, pastries, Waffles and/or milkshakes.....you owe it to yourself.

Fruity Pebbles icecream cone


To create the cone I melted three tablespoons of butter in a saucepan over medium heat and then added ten ounces of marshmallows and stirred those until they were melted as well. I then removed the pan from the heat and stirred in six cups of Fruity Pebbles.
I then spread the mixture between two pieces of wax paper, flattened them into a sheet with a rolling pin and wrapped them around a cone form. Altogether I was able to make three pretty large cones with this one batch.
Unlike with the Rice Krispies Treat Cone where I used chocolate chip cookie dough ice cream I instead opted for regular ol’ vanilla this time, but with one small exception… I also mixed in the leftover Fruity Pebbles that I had with the ice cream, which combined with the Fruity Pebbles that were already in the cone made this so, so good!

Shrimp and Deviled Eggs


Shrimp and Deviled Eggs

6 eggs, boiled
1 tablespoon mayonnaise
1/2 cup chopped small cooked detailed and peeled shrimp
12 whole small cooked shrimp
Chopped green onion
2 tablespoons fresh chopped parsley
Kosher salt and black pepper
Small cooked shrimp
Old Bay Seasoning 

Prep Work
Finely chop up green onion, parsley and a couple of small shrimp.

Boil eggs on medium heat for 10 minutes. Remove, crack and let cool in cold water, peel, and cut in half lengthwise.

Remove yolks and place in bowl. Add mayonnaise to the yolks and mash well with a fork until all lumps are gone.  Add parsley, green onion and chopped shrimp. Stir to combine. Season with Kosher salt and pepper.

Drop teaspoonfuls of the egg yolk mixture into the egg halves.  Top with a shrimp for garnish.  Sprinkle with Old Bay Seasoning. Refrigerate until it's time to serve.

Variation – You can substitute the shrimp with crab and/or bacon.

So many people have asked me to post my cobbler recipe. Most of the time for the crust but I was not giving that recipe away. However I have succumb to pressure and have decided to show you on video to make it. Here it is......enjoy.

Amazing Tomato Basil Pasta


Ingredients

12 ounces pasta (I used Linguine)
1 can (15 ounces) diced tomatoes with liquid (You can use fresh if you like as well)
1 large sweet onion, cut in julienne strips
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
2 teaspoons dried oregano leaves
2 large sprigs basil, chopped
4 1/2 cups vegetable broth (regular broth and NOT low sodium)
2 tablespoons extra virgin olive oil
Parmesan cheese for garnish

Directions

Place pasta, tomatoes, onion, garlic, basil, in a large stock pot. Pour in vegetable broth. Sprinkle on top the pepper flakes and oregano. Drizzle top with oil.

Cover pot and bring to a boil. Reduce to a low simmer and keep covered and cook for about 10 minutes, stirring every 2 minutes or so. Cook until almost all liquid has evaporated – I left about an inch of liquid in the bottom of the pot – but you can reduce as desired .

Season to taste with salt and pepper , stirring pasta several times to distribute the liquid in the bottom of the pot. Serve garnished with Parmesan.

Fruit omelet


The thought just came to mind about making a fruit omelet and I threw it together for brunch on a Sunday.

Two eggs mixed with 3 tbls of Italian sweet cream coffee creamer, sliced apple, 2 large sliced strawberries, 5 blackberries and some gouda cheese shavings. (Gouda cheese goes good with fruit) vegetable oil spray for the pan.
