Bacon and Blue Cheese stuffed onion



Ingredients
4 large-sized sweet onions (Vidalia, Maui sweets, sweet yellows)
1 stick of butter, room temperature
2/3 cup blue cheese, crumbled
4 strips bacon, crumbled
1/2 teaspoon dried thyme
salt and pepper to taste
Directions
Trim the ends off of the onions, and peel. Using a melon baller or small spoon, scoop out the inside of the onion to create a cavity. (Be careful not to dig all the way through the bottom).
In a small bowl mix together butter, cheese, bacon, and thyme. Season lightly with salt and pepper. (Blue cheese is a bit salty so go easy).
Using a spatula or small spoon, stuff the mixture into the onions, completely filling the center.
Place each onion on a square of aluminum foil. Draw foil up to create a sealed pouch. (Keep the foil from touching the sides of the onion, and make sure the top is sealed to hold in steam).
Heat your grill on high. Reduce heat to medium low and place the foil pouches directly over the heat. Close the lid of the grill and cook for 30 – 40 minutes. (Cooking time will vary upon size of onions). Resist the temptation to open the grill and the pouches.
Remove from grill and allow to stand for a full 5 minutes before opening the pouches. (Caution, the steam from the pouches will be hot).

Swineapple: Hollowed-Out Pineapple Stuffed with Ribs Wrapped in Bacon 


It's really quite a feat. It's a hollowed-out pineapple stuffed with boneless country style ribs rubbed with homemade seasoning and wrapped in thick cut bacon and sprinkled with a light creole seasoning. Smoked at 240 degrees for 5 hours.

I did it a little bit different.....

You will find that they are the spot to go to when multiple palettes want something different.

Hey let me explain this fresh squeezed orange juice because you really do not understand fresh squeezed orange juice made after you order it and see it being made! I have driven across town just to get the oj.

I would advise that you make it your business to check out 

Oooh and the Eggs Benedict  oh my goodness. However after being named The Original Pancake House you have to know that the pancakes are from scratch and simply outstanding.

Great Awakenings - Coffee (Philadelphia, Pa.)


Great Awakenings Cafe is an easy going coffee shop nestled in the Northeast section of Philadelphia, Pennsylvania that has incredible lattes, coffees, pastries and ice cream. 

Besides getting a premium cup of Joe Great Awakenings Cafe is also involved with the community by having art shows that suport youth groups and has also has bible study there on certain evenings (check the website). 

I enjoyed a salted caramel latte that I cannot anything like it in those high priced chain coffee spots and my son is now hooked on vanilla lattes. If you're ever in Philadelphia stop by this unique coffee shop for icecream, pastries, Waffles and/or milkshakes.....you owe it to yourself.
